Easy Mediterranean Baked Chicken

One year back in college, Allen and I went on a date to this Greek restaurant in Richmond called Stella’s. It was a lovely place with a homey feel, as we were seated at a community table filled with hungry patrons. I ordered the Rock Fish special, which was topped with several Mediterranean ingredients, including olives, tomatoes, and feta! It was incredible. Allen was actually jealous that he did not order what I got. The flakiness of the fish, mixed with the fresh flavors of the tomatoes and olives left me drooling. Ever since that dinner, I have been attempting to recreate a similar dish. This easy Mediterranean Baked Chicken recipe is my attempt at just that!

The Mediterranean Dream

I love Mediterranean food. I would say that aside from Spanish food, it is one of my favorite cuisines. My dream is to be able to visit Greece someday, along with other countries in the Mediterranean. Not only are the ocean views and historic architecture stunning, but then I can finally experience true, Mediterranean cuisine. When we went to Stella’s in Richmond, I felt as if I was in Greece. The aromas that filled the restaurant reminded me of the assumptions that I have of what it will be like some day to visit there. For now, I will continue to dream and feed my desired with kalamata olives and feta.

All Feta Everything

Let’s be honest… I put feta on everything. Well, not everything, but pretty darn close. Everything from my omelets to my salads, and even in the case of this recipe, my chicken! Feta is a Greek aged cheese that is typically made from sheep’s milk. In the U.S., it is made with a mixture of sheep and goat’s milk. The feta is brined during production, which gives it a salty flavor that pairs well with many dishes. I do not add salt to many of my dishes to begin with, but especially not when cooking with feta. You can buy feta in either large blocks, or crumbled containers, which are perfect for salad toppings. The feta in this Mediterranean Baked Chicken recipe complements the fresh, acidic flavor of the tomatoes perfectly, all while enhancing the rest of the selected vegetables. I predict that after eating the combination of this dish, you will be hooked on the Mediterranean diet, just like me!

Easy Mediterranean Baked Chicken

The easy and flavorful baked chicken is the perfect family dinner or meal prep option!

Cook Time 30 minutes

Ingredients
  

  • 1 Tbs grapeseed oil
  • 1 small yellow onion diced
  • 6 garlic cloves crushed
  • 28 oz diced tomatoes canned
  • 1/4 c fresh basil chopped
  • 1 tsp black pepper
  • 15 oz artichoke hearts canned and chopped
  • 2 Tbs capers juices drained
  • 1/2 c kalamata olives
  • 1/2 c feta cheese crumbled
  • 1.5 lbs boneless skinless chicken breast 2-3 large breasts
  • 1 lemon
  • 5 Lunar tomatoes quartered

Instructions
 

  • Preheat oven to 400 degrees F
  • Heat a large skillet on the stove for 2 minutes
  • Add grapeseed oil, diced onions, and crushed garlic
  • Saute for 2 minutes, until onions begin to brown 
  • Add the canned tomatoes, basil, pepper, and stir to combine
  • Bring the tomato sauce to a simmer and cook for 3 minutes (DO NOT STIR)
  • Take half of the sauce mixture and pour it into the bottom of a 9×13 pan
  • Place half of the amounts of each ingredient into the pan: capers, olives, artichokes, and feta
  • Cut the chicken breast longways/in half to “double” the amount of chicken 
  • Line the chicken up in the pan on top of the vegetable toppings – There should be 5-6 pieces of chicken
  • Squirt the juice from one lemon on top of the chicken
  • Top chicken with remaining half of each topping, beginning with the feta, until all toppings are on 
  • Finish off the layering with the rest of the tomato sauce mixture
  • Bake chicken uncovered in the oven for 30 minutes 
  • Serve with a side salad or pasta and enjoy! 

Notes

This recipe can be made with fish, just decrease the cook time to 15-20 minutes, or until fish is cooked completely. All of the steps and layering of ingredients remain the same. 
Feta can be omitted for those who are lactose intolerant.
