March is pretty cool for a few reasons… First, it’s the beginning of Spring, which means warm weather! Second, it gives me a reason to make green, festive food for St. Patrick’s Day. And last but not least, it’s my birthday month! Wohoo! That means that this month, I will be sharing with you some of my favorite Spring, St. Patty’s Green, March-themed recipes! Starting with this classic party app – Spinach and Artichoke Dip 😀 My friends always love when I make this for our parties. Serve it up with a nice baguette and you won’t have leftovers!
One reason I decided to make my own recipe is that all of the store bought dips have tons of horrible ingredients in them. The only questionable ingredient in this recipe is the cream cheese. I usually try and get the low-fat option, which makes me feel a little better about dipping some white bread in the creamy goodness. Also, I cut out the regular cheese, which most recipes online have because I realized after many attempts that it wasn’t needed! The flavor and consistency of the dip comes from the cream cheese, so I had to keep that. The recipe itself is super easy and there are minimal ingredients. You can literally whip this up right before walking out the door for a party (trust me, I’ve done it).
15-minute Spinach and Artichoke Dip
Ingredients
- 2 Tbs grapeseed oil any high heat oil
- 2 8 oz. bags of spinach
- 2 13.5 oz. jars artichoke hearts diced roughly
- 1 tsp salt
- 1 tsp black pepper
- 2 Tbs garlic powder
- 1 Tbs onion powder
- 8 oz cream cheese cut into chunks
Instructions
- Heat oil in a large pot on medium-high heat for 1 minute
- Add 1 of the bags of spinach and stir constantly for 1 minute
- When the spinach has wilted enough with room to add the second bag, add it
- Stir constantly for 1 minute
- Once the majority of the spinach has wilted, turn heat to medium-low and add the artichokes, salt, pepper, and garlic and onion powder
- Allow to simmer for 5 minutes
- Add chunks of cream cheese and turn heat up to medium-high
- Let heat up for 1 minute back to temp
- Then, stir constantly for 3-5 minutes to completely melt all chunks
- Add extra salt, pepper, or garlic powder at the end to taste
- Serve with toasted French baguettes and enjoy!
