Heat oil in a large pot on medium-high heat for 1 minute
Add 1 of the bags of spinach and stir constantly for 1 minute
When the spinach has wilted enough with room to add the second bag, add it
Stir constantly for 1 minute
Once the majority of the spinach has wilted, turn heat to medium-low and add the artichokes, salt, pepper, and garlic and onion powder
Allow to simmer for 5 minutes
Add chunks of cream cheese and turn heat up to medium-high
Let heat up for 1 minute back to temp
Then, stir constantly for 3-5 minutes to completely melt all chunks
Add extra salt, pepper, or garlic powder at the end to taste
Serve with toasted French baguettes and enjoy!
