Easy 5-minute Chimichurri Sauce

Can you smell that? That’s the aroma of my sizzling charcoals because grilling weather is here, baby! This Easy 5-minute Chimichurri Sauce will liven up your next grill out. You can drizzle it on veggies, shrimp, steaks… you name it! Bonus: It’s Whole30 approved!

What is Chimichurri?

Several years ago, I saw a recipe on Pinterest that sparked my attention. This unknown, eye-catching green sauce was drizzled over rows of skewered shrimp that appeared to be waiting for the grill. I was curious as to what this green sauce was. Did the blogger create it from scratch? Was it something store-bought? After several minutes of research, I learned that it was called “Chimichurri”: a green, herb-based sauce originating from South America, specifically Argentina and Uruguay. It is typically used in those countries as a sauce or marinade when grilling meat or seafood, just as I saw from the Pinterest picture.

Easy Peasy Lemon Squeezy

Honestly, this heavenly green sauce is fool proof. You could be the most novice of chefs and still master a bangin’ chimichurri. All you have to do is throw the ingredients in a food processor or blender and pulse away! It took me some time to master the perfect ratio of herbs to liquids, but I think I finally got it. From my original research, it was clear that the two main herbs are parsley and oregano. While I’m sure that combination works well for the South Americans, I decided to put my own twist on their recipe. Since I’m not a huge fan of oregano, I decided to use another one of my favorite green herbs… cilantro! If you are one of those people who are genetically inclined to hate this delicious herb, you can attempt to substitute fresh oregano at your own risk.

Easy 5-minute Chimichurri Sauce

This South American green sauce is the perfect addition to your next grill out! 
Prep Time 5 minutes
Servings 1 cup

Ingredients
  

  • 1 1/4 cup fresh cilantro
  • 1 cup fresh parsley
  • 1/2 white onion diced
  • 1/2 cup extra virgin olive oil
  • 1 lime juiced
  • 1/2 tsp crushed red pepper
  • 4 garlic cloves minced
  • 1 Tbs red wine vinegar
  • salt & pepper to taste

Instructions
 

  • Separate the herb’s fresh leaves from their stems 
  • Discard the stems and measure out the fresh herbs according to the ingredient list
  • Place all ingredients in a food processor or blender and pulse until the fresh herbs are very fine and the ingredients are well combined 
  • Rub on a steak, shrimp, etc. prior to grilling and enjoy!
