Happy Summer, everyone! I can’t believe June is almost over. Where has the time gone? I know I’ve spent my time either working, or in the kitchen whipping up some new recipes. Allen and I discussed at the end of Spring that we needed to be more intentional this Summer with spending time outside. Since we had that talk, we have been going on more walks, bike rides, and hikes than ever before. Even though it gets super easy to just be lazy and hang out in the AC, it is important for your mental and physical health to get moving and get those rays! One way to be outside more often in the Summer is if you grill your meals. Whether you eat meat or you don’t, there is something out there for you to grill.
My Big Fat Greek Burger
For my meat loving friends, grilled burgers are usually the go to. The problem with burgers is that they are boring. What most people don’t think to do is add ingredients to the meat mixture before they patty it up. Adding your favorite toppings to the burger meat itself gives it so much more flavor and pizzazz. For example, with these Easy and Healthy Greek Turkey Burgers I added most of the Mediterranean topping directly into the meat mixture. If you aren’t a fan of feta or olives, you can totally omit them and the burger will still hold together. Although, I’m not sure who is crazy enough to leave out the feta?!
Easy and Healthy Greek Turkey Burgers
Ingredients
- 1 lb ground turkey
- 2 tsp garlic powder
- pinch black pepper
- 1 Tbs dill
- 3 Tbs feta
- 1/2 cup chopped spinach VERY FINE
- 2 Tbs almond flour
- 14 kalamata olives chopped fine
- 4 whole wheat rolls or lettuce for wraps if desired
Dill Sauce
- 1/2 cup plain greek yogurt or nut (dairy free) yogurt
- 1/2 lemon juiced
- 2 Tbs dill
- dash salt
Recommended Toppings
- 1 cucumber sliced
- 1 large tomato sliced
- 1/2 red onion sliced
Instructions
- Mix all of the turkey burger ingredients in a large bowl
- Take the meat out of the bowl on a cooking surface and roll into a large ball
- Cut the ball in half vertically, then horizontally to form four equal sized balls
- Take each individual ball and roll to form a nicely shaped patty
- Heat your grill up or frying pan on med-high heat
- Cook the burgers for 4 minutes on the first side, flip
- Reduce heat to medium and cook for 3 minutes on the second side
- While the burgers are cooking, make the dill sauce in a small bowl
- Assemble the burgers and top with several spoonfuls of dill sauce
- Enjoy!
