End of an Era
Friends, I cannot believe that this decade is coming to an end! Looking back, there is so much that I have seen, done and accomplished in the last ten years. I’m going to date myself here, but I graduated high school AND college, which are two huge milestones. I was thrown into the adult world and I began my journey living on my own. In the last seven years, I met Allen and we got engaged, married, and bought a house together! I have met so many amazing people, including some of my best, forever friends. Most importantly, it was five years ago that I started cooking intensely, and the concept of Passport Flavor was born. It was only just in the last two years that I have embarked on this journey as a blogger, which is something I never could have imagined. I have seen so much change and growth in just the last year that I cannot imagine what everything will look like at the end of the next decade!
Looking Ahead…
This last year, and even the rest of the decade, was not perfect. Among the triumphs and milestones, I suffered loss which shook me to my core. I’ve learned to manage the daily struggles of grief, and look towards the future for myself, and my family. I’m not a huge “New Years resolution” kind of person, because they are never sustainable. However, I do feel it is appropriate to set rational, attainable goals or visions, and take small steps every day to achieve them.
Personally, I hope to be more present in relationships, and make time for the people that matter in my life. The last half of the decade was a whirlwind, which incidentally led me to neglect many people. Professionally, I hope to continue nursing in whatever way God leads me, while I continue to develop Passport Flavor in its entirety. I wish to laugh even more, love unconditionally, give more than I receive, and work on my compassion and patience with other people. I know that none of this has to do with food, or garlic butter shrimp, but I’m all about transparency, and this is a blog. Skip to the end if you just want my Easy Garlic “Butter” Shrimp recipe. 😉
2020 Mantra
My wish for you in the next year (if you have not already) is that you find self love, because it’s crucial. Create a routine for self care so that your mind, body, and spirit strive for wholeness. I hope that you give yourself grace when you mess up, because it will happen. Don’t wait for a sign, or for the right moment to do or say something. Time will pass and you will end up regretting that. I hope that you use social media for it’s positive benefits, and turn away from it when it makes you feel bad about yourself. Nobody is perfect and all of our lives have filters.
I pray that you make an effort to always speak words of kindness, and give compassion to all living things. I wish that you find something or someone that sets your soul on fire, but don’t seek worth in it. Find worth in Christ, because when the milestones are over, the high wears off, and everything/everyone is gone, only He remains. And He will sustain you through whatever life brings. I wouldn’t have gotten through the last decade without Him, and I sure won’t be ditching Him in the next. With that said, I wish you the happiest of New Year’s, and that you spend it with the people you love.

Easy Garlic “Butter” Shrimp
Ingredients
- 1 1/2 cup Earth Balance
- 2 lbs shrimp thawed and peeled
- 4 garlic cloves minced
- pepper to taste
- 2 Tbs fresh parsley chopped
- 1 lemon juiced
optional
- 1 Tbs Parmesan cheese grated
- 1 tsp red pepper flakes
Instructions
- Heat a medium sized pan on medium heat for 1 minute
- Melt Earth Balance in pan for 1 minute, stirring occasionally
- Add shrimp and ground pepper, increase heat to med/high
- Cook shrimp for 3 minutes, stirring occasionally until shrimp is almost finished cooking
- Decrease heat to medium and flip shrimp to cook any raw sides that are left for 1 minute
- Add minced garlic and simmer for 1-2 minutes, until sauce is fragrant, being careful not to burn the garlic
- Remove pan from heat and toss shrimp with lemon juice and parsley, and any desired optional ingredients
- Serve with fancy bread
