Easy Garlic "Butter" Shrimp

Ingredients
  

  • 1 1/2 cup Earth Balance
  • 2 lbs shrimp thawed and peeled
  • 4 garlic cloves minced
  • pepper to taste
  • 2 Tbs fresh parsley chopped
  • 1 lemon juiced

  • 1 Tbs Parmesan cheese grated
  • 1 tsp red pepper flakes

Instructions
 

  • Heat a medium sized pan on medium heat for 1 minute
  • Melt Earth Balance in pan for 1 minute, stirring occasionally
  • Add shrimp and ground pepper, increase heat to med/high
  • Cook shrimp for 3 minutes, stirring occasionally until shrimp is almost finished cooking
  • Decrease heat to medium and flip shrimp to cook any raw sides that are left for 1 minute
  • Add minced garlic and simmer for 1-2 minutes, until sauce is fragrant, being careful not to burn the garlic
  • Remove pan from heat and toss shrimp with lemon juice and parsley, and any desired optional ingredients
  • Serve with fancy bread

Notes

You may substitute the Earth Balance for regular butter or ghee, but consistency and outcomes may vary
