Easy Garlic "Butter" Shrimp

Ingredients
  

  • 1 1/2 cup Earth Balance
  • 2 lbs shrimp thawed and peeled
  • 4 garlic cloves minced
  • pepper to taste
  • 2 Tbs fresh parsley chopped
  • 1 lemon juiced
optional
  • 1 Tbs Parmesan cheese grated
  • 1 tsp red pepper flakes

Method
 

  1. Heat a medium sized pan on medium heat for 1 minute
  2. Melt Earth Balance in pan for 1 minute, stirring occasionally
  3. Add shrimp and ground pepper, increase heat to med/high
  4. Cook shrimp for 3 minutes, stirring occasionally until shrimp is almost finished cooking
  5. Decrease heat to medium and flip shrimp to cook any raw sides that are left for 1 minute
  6. Add minced garlic and simmer for 1-2 minutes, until sauce is fragrant, being careful not to burn the garlic
  7. Remove pan from heat and toss shrimp with lemon juice and parsley, and any desired optional ingredients
  8. Serve with fancy bread
