Meal Prep Machine
The biggest lesson you should learn today is how amazing the Instant Pot is for creating healthy eating habits. Whether you are vegan or love meat, there are tons of staples you can make that will revolutionize your cooking. Spaghetti squash, beans, rice, steamed veggies… my IP meal prep list could go on forever! Hands down, the best items we meal prep for our busy weeks are these Easy Instant Pot Hard Boiled Eggs. They are the perfect way to meal prep breakfast without having to sacrifice time and health. Especially if you are a bacon egg and cheese bagel fan like myself!
That’s Eggs-ellent!
I never used to make hard boiled eggs because I hate watching water boil. Well, with the Instant Pot you don’t have to! If you can, let the eggs out at room temperature for 5-10 minutes. I have found that the “warmer” they are, the less they crack during cooking. Honestly, it’s not a perfect science. It’s a great day when less than half of the eggs crack! If you do have the Instant Pot, I would suggest that you invest in several cooking accessories. For this recipe, a tiered rack to stack the eggs is recommended. This one that we have allows you to make 14 eggs at one time. However, if you do not have the tiered rack, you can only cook about 8-10 eggs on the provided rack at a time. The eggs are not supposed to sit in the bottom, or touch the sides. Having the tiered rack helps avoid that issue!
