SnapDragon Apples

I’m such a picky apple eater. If the apple doesn’t make a sound when I bite into it, it’s not for me. I was recently introduced to SnapDragon apples, which are FULL of crunch and flavor! Last year, I was looking for the perfect apple to make this recipe. It wasn’t long after trying some SnapDragon apples that I knew they were it. By themselves, they are great for people like me who love crunchy apples. However, in the recipe they softened up in texture and flavor. They provided the perfect sweetness for these Easy Vegan Apple Pie Bars. If you love apples bursting with flavor, you will love SnapDragon apples and this recipe!

Soft and Crumbly

When I was young, my grandmother made apple crisp all the time. I have always wanted to make something with a crumb topping. I think that’s why I love these so much. These apple pie bars are my take on the classic apple crisp, but a little easier to eat (no utensils required). Cut the final product into 9 bars and enjoy! You could eat one in a bowl with a spoon like apple crisp. However, if you do that, they better be topped with vanilla ice cream! Whichever way you eat them, they are absolutely delicious!

Vegan Apple Pie Bars

A soft and crumbly vegan dessert that is perfect for the entire family!

Equipment

  • Mixer, hand or stand

Ingredients
  

Crust

  • 1/2 cup Earth Balance vegan butter room temp
  • 1/4 cup cane sugar
  • 1 tsp maple syrup
  • 1/2 tsp vanilla extract
  • 3/4 cup whole wheat flour
  • 1/2 cup oat flour

Filling

  • 5 SnapDragon apples
  • 1/4 cup oat flour
  • 1/8 cup cane sugar

Topping

  • 1/2 cup whole wheat flour
  • 1/2 cup almond flour
  • 1 cup old fashioned rolled oats
  • 1/4 cup cane sugar
  • 2/3 cup Earth Balance vegan butter
  • 1 tsp ground cinnamon
  • 2 tsp maple syrup
  • pinch salt

Instructions
 

  • Preheat the oven to 350F

Crust

  • Add the crust ingredients into the bowl of a stand mixer (or large bowl and use a hand mixer)
  • Mix for 3-4 minutes until sugar and butter are combined well and a dough has formed
  • Press the dough evenly into the bottom of a parchment or tinfoil lined 8×8 pan. Bake uncovered for 12-14 minutes

Filling

  • While the crust is baking, wash and peel the apples
  • Dice the apples into small cubes (by hand or with a chopper) and place into a large bowl
  • Add flour and sugar to the bowl. Mix well to coat all of the apples with the flour and sugar mixture. Set aside

Topping

  • Add all of the topping ingredients to the stand mixer bowl except for the "butter"
  • Mix on a medium speed and add in "butter" in small increments. You will have to stop the mixer occasionally to scrape the sides of the bowl.
  • Once all of the "butter" is in the bowl, stop the mixer and start to mix the topping with your hands until well combined and crumbly

Assembly

  • Pour and evenly spread the apple mixture onto the baked crust
  • Press the apples gently down into the crust
  • Using your hands, spread the topping mixture onto the apple layer, crumbling it through your fingers
  • Bake uncovered for 45 minutes
  • Serve immediately, or store in an air tight container for approximately one week. Enjoy!
