Who doesn’t love a cold, fresh Guinness? While I’m sure there a a few people out there who don’t, I know I sure do! Everything Guinness makes me think of St. Patrick’s day. In the past I’ve made a Guinness beef stew, and the combination of those ingredients is what gave me the idea for these sliders. We are little late for the leprechaun holiday, but what doesn’t scream “dad” like a nice juicy steak slathered with Guinness?

Sliders Anyone?

Does anyone else think sliders are just the cutest thing? I’m slowly becoming obsessed with them. I recently thought about developing a recipe for them because we had some wonderful shrimp sliders at a local restaurant, Zoetropolis. We also tried their pulled pork bbq ones and they were to die for. When I was deciding what to whip up for Father’s Day, sliders seemed like a no-brainer! Once the steak, onions, and mushrooms are cooked, assembling the finished product is super easy. Just stack all of the ingredients between the slider buns and you are set!

Guinness Steak Sliders with Brie, Caramelized Onions, and Mushrooms

These mini steak sandwiches are perfect for the Guinness lover!
Prep Time 6 minutes
Cook Time 15 minutes
Total Time 21 minutes

Ingredients
  

  • 1 15 oz Guinness
  • 1 lb. sirloin strip steak
  • 1 tsp black pepper
  • 1 Tbs garlic powder
  • 10 slider buns
  • 1 yellow onion julienne
  • 8 oz mushrooms sliced
  • 2 tbs grapeseed oil
  • 1/4 c red wine vinegar
  • 1 Tbs non-dairy butter Earth Balance
  • 4 oz brie
  • arugula

Instructions
 

  • Preheat oven to 350F
  • Separate slider buns and place face down on a baking sheet
  • While oven is preheating, place steak in a deep dish, coat with garlic powder and pepper, and pour in Guinness, reserving 3/4 (set aside)
  • Cut onions and mushrooms
  • When oven is preheated, bake rolls for 5 minutes, turning the pan halfway through cooking
  • Heat frying pan on med-high heat for 2 minutes
  • Add onions, Guinness, and red wine vinegar to heated pan
  • Saute 6 minutes, stirring occasionally
  • Add non-dairy butter and mushrooms to pan, saute another 4 minutes, stirring often
  • When mushrooms are almost done, begin heating the method of cooking for the steak
  • Cook steak according to desired taste*
  • Slice desired pieces of brie and set aside
  • Remove steak and carefully slice, placing brie on top asap
  • On slider bun bottoms, stack arugula, steak (with melting cheese on it), onions/mushrooms, and then top with the second slider bun
  • Enjoy!

Notes

*I cook mine for 2-3 minutes on each side.
