Your Next Taco Tuesday
If you do not follow me on Instagram, you’re missing out. Just kidding, but you may not know that Taco Tuesday is a regular occurrence in our household. Tacos are life and do not let anyone tell you otherwise. With that said, it is only respectful that my very first creation in our Instant Pot® pays homage to the glorious Tex-Mex staple. After the long hours of research and learning about the machine itself, I decided to wing a slow cooker recipe I have made before. Pretty much, I just put the same ingredients in the Instant Pot® that I would in the slow cooker. Then, I read the manual for suggested cooking times for chicken and voila! I can officially brag to you about how I made a meal that would normally be perfected after simmering 8 hours in the Crock-Pot® in 30 minutes. THAT’S RIGHT. Set-it and forget-it transformed into come-back-and-serve-it 30 MINUTES LATER. Now folks, THAT is the magic of this genius appliance. Unbelievable.
My Instant Pot Goal
Through my trial and error, I can provide you with the recipes for pressure cooking that will transform your meals. Gone are the days of stopping at McDonald’s on the way home from work because you do not want or have time to spend 3 hours slaving in the kitchen. I’ll be the middle man that burns three batches of lasagna so that you don’t have to! I’ll give you the honor of making it right the first time 😉 . If the Instant Pot® isn’t something that you are at all interested in, or still a little hesitant with, I will try to attach a slow cooker conversion, just like in this recipe. I am still a Crock-Pot® girl at heart and cannot abandon my roots. With that said, I am SUPER excited to start this journey of pressure cooking. Instant Pot Cilantro Lime Chicken Tacos
Equipment
- Pressure cooker
Ingredients
- 1 1/2 lbs boneless skinless chicken breasts sliced in half longways
- 1/2 red onion diced
- 1 cup water
- 1/2 cup Whole30 approved salsa
- 1 Tbs garlic powder
- 1 Tbs onion powder
- 1 Tbs cumin
- 1 Tbs chili powder
- 2 limes juiced
- 1/4 cup cilantro chopped
- 12 small taco shells
Optional Toppings
- avocado
- cheese
- plain greek yogurt
- spinach/lettuce
- hot sauce
- cilantro
Instructions
- Add all ingredients to the Instant Pot and stir to coat the chicken in the spices and salsa
- Seal the IP and set on Normal/High Pressure to Manual Pressure Cook for 6 min
- When the IP beeps that it is done, Quick Release the steam
- Remove the chicken from the IP and shred with a fork
- Return the shredded chicken to the IP to soak in the juices
- Assemble tacos with your favorite ingredients, or serve over lettuce as a taco salad!
