1 1/2 lbsboneless skinless chicken breasts sliced in half longways
1/2red oniondiced
1cupwater
1/2cupWhole30 approved salsa
1Tbsgarlic powder
1Tbsonion powder
1Tbs cumin
1Tbschili powder
2limesjuiced
1/4cupcilantrochopped
12small taco shells
Optional Toppings

plain greek yogurt
spinach/lettuce

Instructions
Add all ingredients to the Instant Pot and stir to coat the chicken in the spices and salsa
Seal the IP and set on Normal/High Pressure to Manual Pressure Cook for 6 min
When the IP beeps that it is done, Quick Release the steam
Remove the chicken from the IP and shred with a fork
Return the shredded chicken to the IP to soak in the juices
Assemble tacos with your favorite ingredients, or serve over lettuce as a taco salad!
Notes
If using a slow cooker, proceed with the ingredients the same way as step 1. Then set the slow cooker to low for 8 hours and cover with the lid. Chicken will shred just as well when the time is up!
