I eat this every day. Literally. I have the occasional crepe from our local brunch destination, but it is rare that I do not eat some form of egg whites for breakfast. This simple, yet tasty kale and egg white omelet pairs with any other side you are waking up with. Coffee, tea, oranges… you name it! I prefer mine with a nice cup of tea and a parfait!
If you are freaking out and you haven’t seen my post on how to sauté kale, you can relax now, I’ve got you covered! It’s very simple and takes no time at all. The first few steps for this omelet are spent sauteing the kale and they are straight from my other post. Follow the recipe below to create this delicious and healthy omelet!
Just a tip: I personally LOVE olive oil that you can spray. I have tried buying a reusable container but the tip always gets clogged and the whole thing stops working. At Aldi, a lot of times they have this, which is just plain extra virgin olive oil. You have to be careful when buying one because sometimes there are additives and chemicals on the ingredients list. What’s in this… just plain EVOO 🙂

Want to spice it up? I add a few dabs of hot sauce to mine! Also, if you are not doing the Whole30®, I add a tablespoon of feta and other sauteed veggies. Peppers, onions, and tomatoes go very well in omelets! Just sauté the kale and veggies simultaneously, then repeat the steps from where you add the egg whites. Voila!Â

Ingredients
- 2 cups of kale washed and stems removed
- olive oil enough for a light coating
- 1 cup egg whites
Instructions
- Place a skillet over medium heat and allow to warm for two minutes
- Spray or "lightly" coat pan with olive oil
- Add kale to pan and lightly spray or coat the kale itself with a tad more olive oil
- Toss and let kale cook for a minute
- Repeat 3-4 times to let kale cook on all sides it will shrink down slowly
- Once the tips begin to brown and crisp, the kale is done
- Add the egg whites and turn up to medium/high heat
- Cook approximately 2 minutes, or until most of the liquid on the top has disappeared adjust the pan to move the liquid around and to keep it from pooling in the center of the pan
- Flip the omelet
- Cook for 1 minute or to desired liking
- Serve
