It’s Fall Y’all
For those of you who do not know, I live in Pennsylvania. Here, we get four distinct seasons, one of them being Fall. It gets crisp and breezy during this time of year, and most people want to curl up by the fire with a hot bowl of soup. I’ve been meaning to make a seafood soup for quite some time now. I always thought that crab bisque would my first, until I recently stumbled upon a shrimp and corn chowder at a restaurant. I immediately thought to myself, “I HAVE to make that in the Instant Pot!” When I saw that Stauffers had bacon on sale this week, the entire recipe hit me. I thought that the bacon would add the perfect amount of flavor to the chowder, and did! Surprisingly, it only took a few tries for me to get the recipe just right. So here it is!
My Instant Pot Obsession
If you are new here, you probably missed my Instant Pot story. It took me a long time to get where I am now. When I first bought the Instant Pot, I had a hard time balancing the instructions. First, I got the burn signal. Second, my food was too watery. Fast forward to today where I have handfuls of tasty successful recipes. If you do not have an Instant Pot, I would highly suggest getting one. It takes some time to get used to. However, if you use my recipes and follow along for tips, I take the guesswork out of it for you! I use the Instant Pot in three ways. First, as a meal prep helper for cooking staples like rice, hard boiled eggs, and steamed vegetables. Second, to meal prep entire meals for a weeks worth of food. Lastly, to make dinner quickly when I have a busy evening, or forgot to plan something for dinner. It honestly is a lifesaver!

Healthy Shrimp and Bacon Corn Chowder
Equipment
- Pressure cooker
Ingredients
- 1 tbs grapeseed oil
- 1 yellow onion diced
- 4 cloves garlic minced
- 1 tsp paprika
- 1 tsp cumin
- 1/4 tsp black pepper
- 3 cups water
- 15 oz corn canned, low-sodium or no salt added
- 2 cups plain almond yogurt
- 3/4 lb shrimp raw and peeled, cut in half
- 8 slices bacon low-sodium, uncured
Instructions
- Turn the IP to Saute function for 10 minutes, let heat up for 2 minutes
- Coat the IP with the oil and add the onions/garlic
- Cook for two minutes, stirring occasionally
- Add the spices and stir to combine for 10 seconds. The bottom will most likely start to burn, but turn off the IP and keep stirring
- Add the water immediately and scrape the bottom of the pan to "deglaze" it (get the burnt pieces off)
- Add the canned corn, ONE CUP of yogurt, and shrimp. Seal the IP and set it to Manual Pressure cook for "0" minutes.
- While the IP is cooking, fry the bacon as desired. Remove bacon and place on a paper towel when done to absorb all of the juices
- When IP sounds, Quick Release the valve and allow all of the steam to exit.
- When depressurized, remove the lid and stir the soup. It will be thin!
- Remove most of the shrimp with a slotted spoon and set aside.
- With an immersion blender (or real blender), blend about 3/4 of the soup so that the corn is still chunky, but in smaller pieces
- Return the shrimp back into the pot, add the 2nd cup of yogurt and bacon, and stir to combine.
- Salt the chowder to taste and enjoy!
