With several holidays around the corner, dinner needs to be quick and easy. Thankfully, we have slow cookers that can do most of the dirty work for us. This Slow Cooker French Onion Roast is the perfect meal to come home to after a night of holiday shopping!

My favorite recipes are the ones with very little hands-on steps. I don’t care how long it has to cook in the slow cooker, as long as I don’t have to do much before I put it in there. For this recipe, browning the meat is recommended, but not necessary. Aside from that step, the recipe is hands off. If you are in a hurry the roast can be cooked on high in as little as 4 hours. However, if you are looking for a more “fall-off-the-bone” sort of thing, a slow roast for 7-8 hours on low is recommended.

Anytime I make a roast with onions, I die a little inside at the aroma that fills our house. If you are trying to please your in-laws with a “fancy” dinner, this is it. Your guests will be mesmerized when they smell the caramelized onions and rosemary garlic filled air. Based on your preference, the roast can be served shredded or cut into slices. Looking for a way to use the leftovers? Shred the rest of the meat and use it to make a sandwich or tacos!

Slow Cooker French Onion Roast

Equipment

  • slow cooker

Ingredients
  

  • 2 lbs Eye Round Roast
  • 2 Tbs non-dairy butter Earth Balance
  • 2 onions sliced into long thin strips
  • 2 Tbs red wine vinegar
  • 4 potatoes cubed
  • 2 cup water or stock
  • 4 cloves garlic minced
  • 1 Tbs rosemary
  • salt to taste
  • pepper to taste

Instructions
 

  • Heat a skillet large enough to fit the roast on medium high heat for a minute
  • Add the non-dairy butter and allow to melt
  • Brown the roast on each visible side for 1-2 minutes
  • When complete, place the roast in the slow cooker, leaving the juices in the pan
  • Add the onions and red wine vinegar to the pan and saute for 1 min, stirring often
  • Add the onions, potatoes, and liquid ingredients to the slow cooker around the roast
  • Sprinkle half of the rosemary, garlic, salt, and pepper on the roast, and the rest on the surrounding ingredients
  • Cook on high for 4 hours, or low for 7-8, until meat is cooked thoroughly
  • Slice or shred roast to serve, and enjoy!
