Easiest Fancy Steak

I am not the kind of person who loves a plain steak. I’m the kind of person that will only eat a steak if it is topped with lump crab meat, or smothered in Marsala sauce. If you are like me and always have to dip your steak in something tasty, this is hands down the easiest (and healthiest) “fancy” sauce you could ever pour over a nice sirloin strip. Bonus: If you use ghee (not butter) and an approved almond milk, this recipe is Whole30 approved!

Cooking with a Cast Iron Skillet

I prefer to cook my steaks in a cast iron skillet. I feel that the cast iron cooks the meat more evenly, and adds a flavor similar to cooking on a grill. Cast iron pans also help retain heat after you are finished cooking, so it helps to keep the meat warm while you are serving the rest of the family. I have also found that my cast iron is naturally non-stick, so I use less oil and ghee when cooking. This is beneficial if you are looking to cut extra calories somewhere in your diet. Also, if you are looking to boost your iron intake, cooking with a cast iron pan releases iron into the food that you prepare, adding extra health benefits to your meal. This is especially important for women, as we need to supplement our iron consumption each month!

Whole30 Garlic Ghee Sirloin Steak

Equipment

  • cast iron skillet

Ingredients
  

  • 3 T ghee
  • 1/2 T dried oregano
  • 1/4 T dried thyme
  • 1 tsp rosemary
  • 2/3 cup Whole30 compliant unsweetened plain almond milk Blue Diamond Unsweetened Original Almond Milk
  • 1/4 lemon juiced
  • 6 garlic cloves minced
  • 1 lb sirloin strip steak

Instructions
 

  • Heat a large cast iron pan on medium heat for 2 minutes
  • Add ghee and stir until melted
  • Add the spices a stir quickly to combine, then immediately add the lemon juice and half of the milk
  • Whisk the sauce and allow it to bubble intermittently for 1 minute
  • Add rest of milk and minced garlic
  • Whisk for another minute, then transfer the sauce to a small bowl and set aside
  • Add the sirloin steak to the pan
  • Cook for 2 minutes on each side until steak is just about done to your liking (and a safe temperature for consumption)
  • When steak is just about done, add the sauce back into the skillet and move the steaks around in the pan to mix up the sauce. This will cause the sauce to brown and thicken a bit.
  • When the steaks are done, remove from the pan and top with remaining sauce
  • Optional: Serve with green beans and potatoes

Notes

The sauce will separate if it sits for too long. Just use a small whisk or your fork to mix it up.
