Equipment

  • food processor
  • silpat mat or baking sheet

Ingredients

Date Sauce

Granola

  • 1/2 cup almonds
  • 1/3 cup pecans
  • 1/3 cup shredded coconut
  • 1 Tbs chia seeds
  • 3/4 tsp cinnamon
  • 1/2 cup oats

Instructions

  • Preheat oven to 375F
  • Prepare date sauce according to recipe. Set 1/3 cup from finished date sauce aside
  • In a food processor, pulverize all of the ingredients EXCEPT the oats until the almonds are in smaller/more bite sized pieces
  • Dump the ground ingredients into a medium bowl and add the oats, mix to combine
  • Add 1/3 cup of date sauce to the bowl. Using a small spatula, mix in the date sauce by pressing the granola onto the side of the bowl until all of the oats/granola are coated and sticky with date sauce. The granola will start to clump up and look like granola clusters
  • Once the oven is preheated, use your hands to crumble to granola clusters onto a silpat mat
  • Bake for 8 minutes and remove from the oven to "turn" the granola
  • Return to the oven and bake for another 12 minutes, until the granola is crispy/the date sauce is no longer tacky
  • Remove the silpat mat from the oven and allow the granola to cool before storing in a container
