Dressing
- 4 Tbs shredded Parmesan cheese
- 1 Tbs yellow mustard
- 1/2 cup almond milk yogurt
- 1 lemon juiced
- 2 Tbs extra virgin olive oil
- 2 tsp ground pepper
- 1 Tbs red wine vinegar
Heat a frying pan on med-high heat for 1 minute
Cook the chicken breast until cooked the entire way through
While the chicken is cooking, strip the kale from the stalks and wash
Tear the kale apart and separate into two bowls
Split the croutons, cooked chicken, and TWO Tablespoons of Parmesan between each salad. Save the other two Tbs for the dressing
Place the dressing ingredients in a small bowl and mix thoroughly with a fork until well combined
Drizzle the dressing on the salads and enjoy!
