Ingredients
  

Dressing

  • 4 Tbs shredded Parmesan cheese
  • 1 Tbs yellow mustard
  • 1/2 cup almond milk yogurt
  • 1 lemon juiced
  • 2 Tbs extra virgin olive oil
  • 2 tsp ground pepper
  • 1 Tbs red wine vinegar

Instructions
 

  • Heat a frying pan on med-high heat for 1 minute
  • Cook the chicken breast until cooked the entire way through
  • While the chicken is cooking, strip the kale from the stalks and wash
  • Tear the kale apart and separate into two bowls
  • Split the croutons, cooked chicken, and TWO Tablespoons of Parmesan between each salad. Save the other two Tbs for the dressing
  • Place the dressing ingredients in a small bowl and mix thoroughly with a fork until well combined
  • Drizzle the dressing on the salads and enjoy!
