Steak, Bacon, & Blue Cheese Salad

This steak, bacon, and blue cheese salad is THE sweet and savory recipe you need this Father's Day weekend!

Ingredients
  

  • 1 small head Romaine lettuce
  • 1 cup arugula
  • 1/2 cup soy sauce
  • 1/4 tsp ground ginger
  • 1/2 Tbs garlic powder
  • 1/4 tsp paprika
  • 1 Tbs mustard powder
  • dash red pepper flakes
  • black pepper to taste
  • 6 oz steak
  • 4 strips bacon
  • 2 Tbs non-dairy butter I use Earth Balance
  • 1 onion julienne
  • 10 cherry tomatoes halved
  • 2 Tbs blue cheese crumble
  • 2 Tbs balsamic vinegar

Instructions
 

  • Wash and trim leafy greens, adding them to a large bowl
  • Combine the soy sauce and spices in a deep dish
  • Add the steak and marinade while chopping the onions
  • Heat non-dairy butter in a small frying pan on med-high heat for 2 minutes, until fully melted
  • Add chopped onions and saute, stirring occasionally for 5 minutes
  • While the onions are sauteing, cook the steak to desired liking, then set aside
  • After 5 minutes, stir the onions and let saute for 2 minutes, DO NOT stir
  • Cook the bacon at this time
  • After the 2 minutes, stir and repeat 2 minutes (no stirring) again
  • Reduce the heat to low, stir the onions, and let them simmer for 2 final minutes, without stirring
  • During this time, you can assemble the salad with the cooked meats and cold ingredients
  • Once they are finished, add the caramelized onions, drizzle on balsamic vinegar and enjoy!

Notes

The salad tastes great even without meat for my vegetarian friends! You could also substitute chicken if you aren't a red meat fan. The options are endless! 
This is NOT a low calorie food when using the steak and bacon as toppings. Calorie count listed on the recipe is for both meat options.
