Flat Iron Steak
I know I’m going to get a lot of flak for this, but I typically eat my red meats well done. I have always had an issue with eating bloody meat. However, more recently I have been venturing out into the world of medium well. I have learned to love the fine strip of pink that provides an abundance of flavor.
Initially, I was going to purchase a flank steak for this recipe. Flank steaks have been my go-to for tacos and anything with a salsa or topping. When I went to purchase the meat, the butcher was incredibly knowledgeable. We chatted about the specific plan for this dish, and I was educated on some of the different meat cuts and best ways to cook them. After my quick lesson, it was clear that a flat iron steak would be superior for a recipe like mine.
When I say that this was one of the best home cooked steaks I have ever had, I’m not exaggerating! The meat was incredibly tender, easy to cut, and bursting with flavor (just as the butcher had said it would be). He also mentioned that a flat iron steak is the perfect cut for anyone who likes their meat well done, as it retains moisture with long periods of grilling. If you prefer another type of steak, the grilled corn salsa will taste perfect on top of anything!
Grilled Corn Salsa
Growing up in Lancaster County, corn was all our family ate from July through October. Corn fritters, chicken corn soup, you name it! I remember looking forward to seeing the countdown signs along the roads telling us when the corn would be ready for harvest. It’s one of those “you know you’re from PA when…” memories that I will remember forever.
As an adult, I rarely cook corn at home. I think the last time that I made corn on the cob was when I created my Easy and Healthy Mexican Street Corn. With that said, I wanted to take advantage of the local corn sales this summer and create a brand new, refreshing recipe. This grilled corn salsa is bursting with flavor and is the perfect topping for a juicy steak. I finished off the rest of the meal with some grilled asparagus and roasted potatoes, which was *chef’s kiss*. I recommend this meal to anyone who wants a taste of summer or wants to make a “fancy” (but easy) meal for a loved one.

Flat Iron Steak with Grilled Corn Salsa
Equipment
- cast iron pan
Ingredients
Corn Salsa
- 1 Tbs ghee
- 3 ears corn husk removed and cleaned
- 1 Tbs red wine vinegar or ACV
- 1 pint cherry tomatoes halved
- 1/4 cup red onions diced (about 1/2 an onion)
- 1 lime juiced
- 2 Tbs cilantro fresh, chopped fine
- salt and pepper to taste
Steak Seasoning
- 2 Tbs ghee melted
- 1 Tbs garlic minced
- 1 tsp paprika
- salt and pepper to taste
Steak
- 1 lb flat iron steak
Instructions
- Prepare the produce/ingredients according to the ingredients list (i.e. dicing, chopping, etc.) and set everything aside
Corn Salsa
- In a medium bowl, carefully cut the kernels off of each cob with a knife. When finished, heat a large cast iron pan on medium high heat for 1 minute.
- Add the ghee and corn kernels to the hot pan and stir until the ghee is melted. Start a timer for 5 minutes and stir occasionally.
- When the timer ends, add the vinegar and tomatoes to the pan. Stir to combine, then set a timer for 2 minutes. Stir occasionally.
- When the timer is finished, turn off the stove, and transfer the mixture to a heat safe bowl. Add the rest of the cold corn salsa ingredients to the bowl and set aside.
Steak Seasoning
- In a microwave safe bowl, add the ghee. Heat about 15-30 seconds until it has melted.
- Add the rest of the seasoning ingredients to the bowl and mix well to combine. Set aside.
Steak
- Preheat a cast iron pan on medium-high heat for one minute (see notes*). While the pan is preheating, use a brush to baste half of the steak seasoning on one side of the flat iron steak.
- Place the seasoned side of the steak face down on the pan (or grill). Baste the raw side that is up with the remaining seasoning.
- Cook each side of the steak in 2-minute increments, flipping back and forth after 2 minutes each time, until steak is cooked in the middle as desired (*Steak is supposed to be cooked to an internal temp of 145°F).
- When finished, remove the steak from the pan/grill and top with grilled corn salsa. Serve with optional roasted potatoes and asparagus and enjoy!
