What is Kale?
Kale can be intimidating and if I’m being honest, at times disgusting. If kale is not prepared in the proper way, it is bitter and tough to chew. Many people do not like eating fresh kale in salads for that reason. I on the other hand, love using kale as a crunchy addition to my salads. For this recipe, the bitter taste of the kale is masked by the Parmesan flavoring of the Caesar dressing. Kale has many incredible benefits, so it is wise to add it to your diet. This leafy green is actually part of the cabbage family! Just one cup of kale is packed with vitamins, minerals, and antioxidants. It is also packed with fiber, to keep you feeling full for much longer. If you cannot tolerate an entire salad of kale, try substituting it for other greens, like spinach or Romaine lettuce!
(Almost) Vegan Caesar Dressing!
So I say this because without the Parmesan cheese, the Caesar dressing is vegan! I added the Parmesan cheese because it makes the dressing taste more like the “classic” version. Since the rest of the ingredients are super healthy, I tasted that there was something missing. I used an almond milk yogurt as the base, so without the cheese, this recipe is dairy free and vegan. However, I think the dressing doesn’t taste as good without the cheese. If you are vegan, try substituting your favorite vegan Parmesan cheese and see how it tastes!

Growing up, my mother made homemade Caesar dressing all the time! However, she made it with eggs, which made the recipe thin. While I love her dressing, I haven’t been able to tolerate the texture of eggs lately. For that reason, I decided to go for a thick Casear dressing in this recipe and remove the eggs altogether. Healthy Kale Chicken Caesar Salad
Ingredients
- 8 oz boneless skinless chicken breasts
- 1/2 bunch kale
- 4 Tbs Fresh Gourmet Organic Croutons
Dressing
- 4 Tbs shredded Parmesan cheese
- 1 Tbs yellow mustard
- 1/2 cup almond milk yogurt
- 1 lemon juiced
- 2 Tbs extra virgin olive oil
- 2 tsp ground pepper
- 1 Tbs red wine vinegar
Instructions
- Heat a frying pan on med-high heat for 1 minute
- Cook the chicken breast until cooked the entire way through
- While the chicken is cooking, strip the kale from the stalks and wash
- Tear the kale apart and separate into two bowls
- Split the croutons, cooked chicken, and TWO Tablespoons of Parmesan between each salad. Save the other two Tbs for the dressing
- Place the dressing ingredients in a small bowl and mix thoroughly with a fork until well combined
- Drizzle the dressing on the salads and enjoy!
