Fresh, Fresh, Fresh…

One thing that I have learned over the last few years is that you cannot beat fresh seafood. From time to time I still get frozen fish or bags of shrimp, but there is something about raw, ready-to-cook seafood that makes the final product taste a thousand times better. That is one of the reason’s why I love Stauffers! Their seafood department is amazing, and the quality can’t be beat. When scallops go on sale, I like to splurge and get a pound or two. They can be expensive normally, so they are something that we only make for special occasions, or nights when we are feeling a little boujee. 😉

Did Somebody Say Scallops?

There are a few reasons why I like scallops. First, they are super easy to cook. They only take about 5 minutes to grill on each side, and less time if you are searing them in a pan! Second, they adapt to any flavor you want them to. I’ve had scallops paired with a spicy mustard, or tossed in tomato basil sauce in a pasta dish. They taste good whether they are spicy, sweet, tangy, or salty. If you have a favorite marinade, chances are you can baste your scallops with it. Lastly, they can be eaten as an appetizer or a meal. Even for this recipe, you can eat the scallops right off the skewers or pop them on to a plate and serve as a tasty appetizer. The options are endless when it comes to cooking scallops!

Maple-Balsamic Glazed Bacon Wrapped Scallops

This sweet and smoky combo is the perfect recipe for your next cookout!

Ingredients
  

  • 24 large scallops
  • 12 slices thin cut bacon hickory smoked optional

Sauce

  • 2 Tbs maple syrup
  • 1/3 c balsamic vinegar
  • 1 Tbs garlic powder
  • pinch black pepper
  • 1 Tbs onion powder
  • 2 Tbs grapeseed oil

Instructions
 

  • Heat up the grill to at least 400F.
  • Cut all 12 strips of bacon in half to make 24 equal pieces
  • Wrap each scallop with one piece of bacon and place on skewer, making sure to put skewer through the two bacon ends to keep them together. Skewer should go through the scallop and through the other side of bacon
  • Repeat until all scallops are wrapped and skewered, 4 scallops to a skewer
  • Make the sauce and brush each scallop with it
  • Place the rest of the sauce in a shallow pan and marinade the skewers in it for 5 minutes, turning halfway
  • Place scallop skewers on the grill
  • Cook for 5-6 minutes on each side, until scallops are cooked the entire way through
  • Serve with veggie skewers or as an appetizer on a plate!

Notes

This recipe can be made with turkey bacon, but the thicker the bacon is, the longer it has to cook. Over cooking scallops can make them chewy, which will ultimately happen if they have to cook longer due to the bacon.
