Slow Cooker French Onion Roast

Ingredients
  

  • 2 lbs Eye Round Roast
  • 2 Tbs non-dairy butter Earth Balance
  • 2 onions sliced into long thin strips
  • 2 Tbs red wine vinegar
  • 4 potatoes cubed
  • 2 cup water or stock
  • 4 cloves garlic minced
  • 1 Tbs rosemary
  • salt to taste
  • pepper to taste

Method
 

  1. Heat a skillet large enough to fit the roast on medium high heat for a minute
  2. Add the non-dairy butter and allow to melt
  3. Brown the roast on each visible side for 1-2 minutes
  4. When complete, place the roast in the slow cooker, leaving the juices in the pan
  5. Add the onions and red wine vinegar to the pan and saute for 1 min, stirring often
  6. Add the onions, potatoes, and liquid ingredients to the slow cooker around the roast
  7. Sprinkle half of the rosemary, garlic, salt, and pepper on the roast, and the rest on the surrounding ingredients
  8. Cook on high for 4 hours, or low for 7-8, until meat is cooked thoroughly
  9. Slice or shred roast to serve, and enjoy!
