Strawberry, Pecan, & Goat Cheese Salad

Summer means fresh market finds! Grab a pint of fresh strawberries and indulge in this healthy Strawberry, Pecan, & Goat Cheese Salad!

Ingredients
  

  • 1 head Romaine lettuce
  • 1 head butter lettuce small
  • 20 strawberries washed and diced
  • 1/2 cup pecans
  • 4 T balsamic vinegar
  • 2 T extra virgin olive oil
  • 2 oz goat cheese

Method
 

  1. Wash an cut lettuce, combining them together and separating them into two salads
  2. Top with all the solid ingredients
  3. Drizzle on the balsamic vinegar and olive oil
  4. Serve and enjoy!

Notes

If meal prepping the salads, or saving the second one for another day, do not put the dressing on. Mix the liquid ingredients together and keep in a separate dressing container until you are ready to eat the salad. To keep the lettuce even more fresh, keep all of the toppings in one container, and the lettuce in another. The juices from the strawberries can also make the lettuce wilt.
