Let’s be honest. Chicken gets pretty boring after a while. It is easy to get in the rut of meal prepping chicken that is seasoned with only spices. Don’t get me wrong, I love my spices! When used properly, spices add incredible flavor to food in the place of fattening or sugar-filled condiments. Unfortunately, spiced chicken can still get tiresome and make it harder to choose healthier meal options. With these 5 Simple & Healthy Chicken Marinades your chicken will be bursting with flavor! Quick, Simple, Healthy, Cheap.

I absolutely love these chicken marinades for a handful of reasons. First, each recipe is quick! Each marinade can be whipped up in 5 minutes or less. Second, each recipe is super simple. There is not a single marinade that requires cooking, and only one requires a knife. How’s that for easy-peasy lemon-squeezy?? Speaking of, there will be lemon squeezing. Third, each recipe is healthy. I was determined to create marinades that didn’t require processed sugar, or ingredients that add empty calories. Each ingredient that adds flavor is meaningful and nutritious! Lastly, each marinade is low-cost, as there are fewer than 10 ingredients in each. Many ingredients you may already have in your home, making the recipe even cheaper!

How to Prepare the Chicken

There are several ways you can cook this recipe. First, you can do as I did and make all five marinades. This option is perfect for those who meal prep. Cooking all five makes a boat load of chicken! It’s perfect for busy individuals who live off leftovers. Second, you can use any kind of chicken cut you prefer. I usually cook with boneless skinless chicken breasts, but when Stauffers has their big meat sales, it is nice to switch things up. I used their leg quarters, which are perfect for those who love the tasty skin. Third, you can cook the chicken however you please. I baked them for this recipe because of the heat wave that hit the other day. No way I was firing up a hot grill and standing outside! However, grilling does create the best crispy skin when cooking the leg quarters.

5 Simple & Healthy Chicken Marinades

Equipment

  • 1 gallon plastic bag
  • 9×13 pan

Ingredients
  

  • 4 Chicken Leg Quarters or 2 lbs boneless skinless chicken breasts

Buffalo Blue

  • 1 cup non-fat Greek yogurt
  • 1/2 cup hot sauce
  • 1 lemon juiced
  • 1 T Red Wine Vinegar
  • 1 tsp black pepper
  • 1/2 cup blue cheese crumble

Teriyaki Ginger

  • 2/3 cup low sodium soy sauce or coconut aminos
  • 1 tsp ground ginger
  • 1 Tbs sesame oil
  • 1 tsp rice vinegar or white wine vinegar
  • 1 Tbs maple syrup
  • 4 garlic cloves
  • 2 T sesame seeds
  • 1 Tbs honey

Lemon Greek

  • 1 cup non-fat Greek yogurt
  • 2 T dried oregano
  • 4 T dried dill
  • 1/2 cup grapeseed oil
  • 4 garlic cloves
  • 3 lemons juiced
  • 1 tsp sea salt

Thai Coconut

  • 1 small onion chopped
  • 13.5 oz canned coconut milk
  • 2 T red Thai paste
  • 1 T garlic powder

Honey Mustard

  • 3 T honey
  • 1/4 cup non-fat Greek yogurt
  • 1/3 cup yellow mustard
  • 1 T maple syrup
  • pinch black pepper

Instructions
 

  • Preheat oven to 400F
  • Combine marinade ingredients in a medium bowl
  • Trim desired fat off chicken and place in the gallon bag
  • Place marinade in the gallon bag and shake well to coat the chicken
  • Place coated chicken in a 9×13 pan
  • Bake for 40 minutes, or until chicken is cooked thoroughly
  • Serve immediately, or refrigerate for up to a week

Notes

Individually, each marinade makes enough to coat/cook 4 leg quarters, or 2 lbs of chicken breasts (4 servings). If you are making all 5 marinades, I suggest halving each sauce recipe and cooking 2 leg quarters for each flavor. If not, you will need a lot of chicken, or you will have a ton of sauce wasted.  
Instructions are to make one marinade of choice. Prep time is for each marinade made. Cook time is for baked leg quarters. 
Nutrition Facts:
It is hard to determine the exact nutrition facts when using marinades. Most of the sauce does not get consumed, so it is not accurate to use the nutrition info to determine how much to consume. It is sufficient to say that 1-2 leg quarters are appropriate for 1 person. When eating boneless chicken, 6-8 oz. is appropriate for an individual.

    We made the Teriyaki Ginger marinade & love it so much! Tastes so good after soaking the chicken for several hours before cooking but even without doing that it’s very flavorful.

    Definitely our go-to chicken marinade from now on!
